The recognition of denomination of protected origin (DOP) for extra - vergine olive oil was obtained by respecting the discipline of production "Valli Trapanesi", in virtue of the EU rule No. 2325/97, published in the official Common Market Gazette L 322 of 25th November 1997, page 33. This recognition represents an important landmark for the associated producers and a greater presence in the national and international markets can be looked forward to.
Therefore, olive oil production in the Trapani area, is a productive sector of great interest, which deserves constant work to qualify the product and support its promotion.
This booklet has the important function to divulge techniques and technology which have bearing on the quality of extra - vergine olive oil, from the growing stage up to transformation and preservation, which are used by operators in the province of Trapani.
