L’origine e ai primi sviluppi del Neolitico nel Vicino Oriente: sono questi i principali temi che vengono
trattati nel Capitolo III, dopo una preliminare disamina delle "facies" culturali dell’Epipaleolitico del Levante (Kebariana, Natufiana). E’ nel corso dell’Epipaleolitico, infatti, che maturarono le premesse del Neolitico, con l’inizio del processo di sostituzione dell’economia di caccia e raccolta con l’economia produttiva.

L’illustrazione dei principali aspetti e sviluppi della Trasformazione Neolitica è preceduta da una introduzione alla Civiltà Neolitica, della quale si mettono in evidenza i principali aspetti: la complessità sociale, la comunicazione (guerra, villaggi fortificati, armi da combattimento, scambio), la struttura economica, l’architettura (domestica, cultuale), dell’arte mobiliare, delle tombe e degli usi funerari, del "culto dei crani".
Una particolare attenzione è riservata alle produzioni artigianali e al trattamento dei metalli.

Nel soffermarsi sulle fasi iniziali del Neolitico Preceramico (PPNA, PPNB), si evidenzia innanzitutto la varietà di ambienti culturali. Si parla quindi dei principali villaggi dell’epoca - Catal Huyuk, Hacilar, Cayonu Tepesi (Turchia). Gerico III, Dhra’, Beisamoun, Basta, Ain Ghazal, Yftahel, Beidha, Netiv Haghdud (Israele, Giordania). Byblos (Libano). Khirokitia (Cipro). Ras Shamra, Tell Aswad, Tell Ramad, el-Kowm, Tell Abu Hureyra, Tell Mureybet, Tell Giaada el-Maghara, Tell Bouqras (Siria). Tell Maghzaliyeh, Ali Kosh (Iraq); e di come alcuni fra questi insediamenti, per le dimensioni molto notevoli e per il corredo di opere di interesse collettivo, siano stati considerati come "qualcosa di più di un villaggio", addirittura come "città neolitiche".

La terza e ultima fase del Neolitico Preceramico (PNNC) è documentata solo nelle regioni più meridionali del Levante. Essa rispecchia la crisi del Neolitico Preceramico Occidentale. Si parla delle possibili cause di questa crisi e dei suoi effetti, quali il ritorno al semi-nomadismo e lo sviluppo della pastorizia.
