FEATURES
APPEARANCE: ruby red, tends to garnet red
when mellowed.
PERFUME: intense, ethereal, sweet-smelling,
floral, spicy, with flavour of ripe fruit, blackberries and red fruit.
TASTE: dry, sapid, well-tannic, hot, soft,
well- balaced, intense and persistent.
EVOLUTION: it is served after a medium-long
period of of ageing (2-6 years).
SERVING TEMPERATURE: 18-20 °C.
TO EAT WITH: roasted red meat, game, braised
meat, seasoned pecorino cheeses.
