"GREEN" RECIPES : Tofu, Sweet Tofu by Annalisa e Giampiero Cara Tofu, or soy cheese, is a most precious ingredient in vegetarian cuisine. With its delicate taste and its soft but firm texture, it can be part of many succulent dishes. Also when it comes to desserts, tofu can play a prominent role. Used in place of diary products and eggs, it gives to vegan desserts a thickness and a consistency they couldn't have otherwise. Lemon Tofucake (serves eight, 200 calories per serving) Ingredients: For the filling: 1 lb. of silken tofu (a particularly creamy variety of tofu, ideal for desserts) - 50 g of brown sugar - 1 Tbs of tahini (a paste made of ground sesame seeds) - 1/2 tsp of unrefined salt - 2 Tbs of cornstarch dissolved in 2 Tbs of rice milk - 1 Tbs fresh lemon juice. For the crust: 2 cups of all bran corn flakes - 60 ml of maple syrup. Preparation: 1. Preheat the oven to 180°C (350°F). 2. Place the corn flakes in a blender and grind them to fine crumbs. Then add the maple syrup and mix very well, until the crumbs are moistened. 3. Pour the mixture into an oiled pie plate of about 20 cm (9 inches) and press it evenly to form a crust. 4. Put the pressed mixture into the preheated oven and bake it for 5 minutes. Then let it cool a bit while you prepare the filling 5. Blend all the ingredients for the filling in a blender, until the mixture is very smooth, then pour it into the cooled crust. 6. Bake the pie until the top is slightly golden, then cool it and refrigerate it until it is thoroughly chilled and firm (it'll take a couple of hours) before serving. (back to the recipes list) Tofu Strawberry Shake (serves 6, 125 calories per serving) Ingredients: 10.5 oz. of firm silken tofu - 2 cups of frozen strawberries - 1/4 cup of honey or maple syrup Preparation: 1. Blend all the ingredients in a blender or food processor until you obtain a thick and smooth mixture (if it's too thick for your tastes, you can add a little rice milk). 2. Refrigerate the mixture, then serve it chilled in high glasses with a straw. (back to the recipes list) Tropical Tofu Pudding (serves 5, 145 calories per serving) Ingredients: 10.5 oz. of soft silken tofu - 1 medium sized banana - 2 cups of 100% pineapple juice - 8 oz. of pineaple (fresh or canned) Preparation: 1. Crush the pineapple, then put it in the refrigerator until chilled. 2. Combine the crushed pineapple with the pineapple juice (chilled), the banana and the tofu in a blender and process it until perfectly smooth an creamy. 3. Serve immediately in cups, garnishing with fresh mint leaves. (back to the recipes list) Eggless Eggnog (serves 8, 230 calories per serving) Ingredients: 10.5 oz. of soft silken tofu - 16 oz. of vanilla rice milk - 4 Tbs. of brown sugar - 1 Tbs. of vanilla extract - 1 cup of rum (optional) - 1/2 tsp. of nutmeg - 1/4 tsp. of ground turmeric Preparation: 1. Combine all the ingredients (except the nutmeg) in a blender. 2. Blend thoroughly (occasionally scrapping down the sides of the bowl, if necessary), then serve chilled and dusted with the nutmeg.
