virgin olive oil is produced from the
centuries old olive-groves of the hilly
Chiaramonte Gulfi countryside, which for
2000 years has been the cradle of one of the
most renown olive oils, today much
appreciated in quality Italian cuisine.
Zottopera olive oil is obtained from olive
trees of the rare "Cetrale"
variety or "Tonda iblea" , dating
back to the Aragonese domination in the 14th
century. The Agrobiologica Rosso adopts
strict rules for the harvest, processing and
preservation that improve the excellent
characteristics of the oil given by these
olive trees for over seven centuries. In
fact, for centuries the owners of
Agrobiologica Rosso have taken care of the
family olive-groves, with experience,
passion and respect of the great family
tradition. Furthermore, the cultures are
selected following the teachings of organic
agriculture. Today like yesterday, olives
are hand picked, one after the other,
collected in small containers, that ensure
the perfect integrity of the drupe (the main
factor of a high quality production), and
immediately sent to be pressed in a modern
oil-mill for cold pressing, that guaranties
perfect sanitary processing conditions
indispensable to the production of an
excellent olive oil. After a short period of
natural decantation that ensures an optimal
maturing, Zottopera oil is ready to be
