Risotto with vegetables
This is the recipe for the basic preparation of risotto: you can change the vegetable you prefer and enjoy with your fantasy! You need olive oil, onion, chicken breast soup, salt, rice and the vegetable you prefer.
Cut the onion in small cubes and cook it with some oil. Add the vegetable you choose (Zucchine, for instance are perferct for risotto!) and let them cook, stiring.
When it's ready, drop the rise (we generally consider 60-70 gr each) and stir together with the onion for a few minutes. Then drop some chicken soup and continue stir. Use the chicken soup little by little, otherwise you risk to obtain a soup instead of a risotto! :-)
When rice is 'nearly cooked', take off the fire, add some parmisan cheese, mix together and serve warm!
The secret is only this! Try and let us know!

Rise and beans soup
beans kg1, rise (70 gr each people), 2 slices garlic, sage, olive oil, salt and pepper.
Cook the beans with 1 1/2 water with salt, garlic and sage.
When the beans will be ready you can decide if mixing them or not; it's important that you don't drop the water of cooking, because you'll use it for cooking the rise.
If you decide to mix them, let all the water, make them boil, and when they reach the boiling temperature, drop the rise and mix with a spoon to avoid the rise to stick on the ground of the pan.
If you prefer not to mix the beans, then drop directly the rise and let it cook in the same way. You'll notice that at the end of cooking, no more water will be visible into the sauce pan!
Serve with some olive oil and rosmarine, if you like.
As far as my personal suggestion, I'd rather prefer mixing the beans, because the soup gets a 'velvet look' that I like!

Rise frittelle (you can find it into the Cakes section - Click here!)
